You can use a food processor’s slicing blade or a mandoline to cut broccoli into thin slices, or simply chop it into smaller slices by hand.
Toss the broccoli with the almonds, cranberries and red onion in a large bowl.
Whisk the dressing ingredients in a smaller bowl, with a generous pinch of salt and black pepper. Pour the dressing over the broccoli (I reserved some extra for dipping) and toss it well. Season well with salt and pepper to taste. Also is great the next day!
