COCONUT BANANA BREAD

Super duper moist (and coconuty!) I started to make Chrissy Teigen's banana bread and didn't have a ton of ingredients so here's my spin!  ​

COCONUT BANANA BREAD

Adapted from Chrissy Teigen's recipe

Makes: 1 loaf
​Takes: 1.5 hours

• 3 overripe bananas, mashed up real good
• 2 eggs
• 1/3 cup coconut oil (or other neutral oil)
• 1 cup flour 
• 1 cups sugar
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup unsweetened shredded coconut
• 1/2 cup dark chocolate chips (optional)

1. ​Combine mashed bananas, eggs, and oil in a large bowl. 
2. In a separate large bowl, combine the flour, sugar, baking soda and salt. Add dry ingredients to the wet ingredient bowl and combine.
3. Fold in coconut and chocolate if using. Pour into greased and floured loaf pan and bake for 50 mins - 1 hour.
