COLD SESAME NOODLES

.This is great for dinner parties! Make a few hours before everyone comes over - no heat up required

COLD SESAME NOODLES

Makes: 6 servings
​Takes: 30 minutes
  • 1 pound spaghetti or rice noodles
  • 2/3 cup water
  • 1/3 cup smooth peanut butter
  • 1/4 cup low sodium soy sauce
  • 1/4 cup seasoned rice vinegar
  • 3 tbsp dark brown sugar
  • 1/4 cup roasted peanut oil
  • 3 tsp chili garlic sauce
  • 1 tsp sesame oil
  • 1 1-inch piece of ginger, peeled
  • 1 clove small of garlic
  • Fresh scallions, chopped, for topping
  • 2 tbsp sesame seeds, for topping
  1. In a large pot, bring water to boil then add noodles and cook according to box. Drain well when done.
  2. In a blender, combine all the ingredients (except sesame seeds and scallions) and process until smooth.
  3. After pasta is done cooking and drained, add to a large bowl. Pour the peanut sesame sauce over the noodles and toss to coat. 
  4. Top with scallions and sesame seeds and leave out at room temperature for up to three hours or refrigerate for longer.
