ELOTE

Summer corn is perfect as is but add these few ingredients for a little kick!

  • 4 ears of corn
  • 3 tablespoons unsalted butter 
  • 2 teaspoons chili powder
  • 1/4 cup grated cotija cheese (parmesan is a good replacement if you can't find cotija) 
  • 1/4 cup freshly chopped cilantro leaves
  • Lime juice
  1. Heat grill to about 450°.
  2. Place corn on grill for and rotate every few minutes until slightly charred.
  3. Rub each ear of corn with 1 tablespoon butter. Sprinkle evenly with chili powder, cotija, cilantro and lime juice. Serve hot!
