These are light, super crunchy and have a little kick!

6 sheets phyllo pastry
4 tablespoons unsalted butter, melted
⅓ cup Trader Joe's "Everything but the bagel" seasoning blend
1/4 teaspoon smoked paprika
1/4 teaspoon cayenne
4 ounces Gruyère, finely grated
Preheat oven to 375°.
Place one sheet of phyllo on a parchment-lined baking sheet. Brush lightly with butter and top with a second sheet of phyllo, pressing gently to adhere. Brush with butter and top with another sheet, pressing gently again.
Sprinkle half of the everything bagel seasoning, paprika, cayenne and gruyere over phyllo.
Repeat with the next three sheets of phyllo and place next to the first set.
Bake crackers until golden brown, 8–10 minutes. Let cool and slice into squares or triangles.
