MINI CHOCOLATE PEANUT BUTTER CAKE

Makes: 4 hefty servings

Chocolate cake
  • 1 cup all purpose flour
  • 1 cup sugar
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 large eggs
​Peanut butter frosting
  • 1/2 cup butter, room temperature
  • ​1/2 cup peanut butter
  • 3 cups powdered sugar
  • 4 tbsp water
  • About 6 reese's, chopped
  • 5-10 reeses, chopped
Make the cakes:
  1. Preheat oven to 350°F and prepare three 4 inch cake pans (or one, three times) with non-stick baking spray and a circle of parchment paper and place on a baking sheet.
  2. In a mixer fit with a paddle attachment, combine the flour, sugar, cocoa, baking soda, baking powder and salt.
  3. In a medium bowl, whisk together milk, vegetable oil, vanilla extract. Slowly add the wet ingredients to the dry ingredients and mix on low speed until well combined. Scrape down the sides of the bowl occasionally to make sure everything is well combined.
  4. Divide the batter evenly (I used about 1/2 cup of batter in each cake pan) and bake for about 20 minutes. Remove cakes from oven and allow to cool for about 5 minutes before flipping onto a cooling rack. Let cool completely.
Make the frosting:
  1. Combine the butter and peanut butter in an electric mixer fit with a whisk and mix until well combined. Add about half of the powdered sugar and mix until smooth. Add half of the milk and mix until smooth. Add remaining powdered sugar and remaining milk. If it becomes to thin, add more powdered sugar.
Build the cake:
  1. If the tops of your cake have a dome or are sunken in, use a serrated knife to remove the tops layer so that they’re flat. Top the first cake with about 1/2 cup of frosting. Smooth frosting into an even layer. Add a handful of the chopped Reese’s on top of the frosting and press into the frosting.
  2. Add the next cake layer and repeat. Add the last cake and finish with a flat layer of frosting. Smooth out the frosting on the sides of the cake, using as little or as much as you prefer. Decorate!
