MISO MAPLE RIBS

6 ingredients + 2 hours in the oven = super impressive, easy meal

MISO MAPLE RIBS

Makes: 4 servings
​Takes: 3 hours
  • 2 racks of baby back ribs (about 2 pounds)
  • 1/2 cup of white miso (can use dark miso if you don't have)
  • 1/2 cup of maple syrup
  • 1/2 cup of rice vinegar
  • 1-2 bunches of scallions (optional)
  • 1 tablespoon of peanut oil
  • Salt and pepper
  1. Heat oven to 300°. Place a wire rack in a baking sheet. Place each rack of ribs on a large sheet of aluminum foil.
  2. Combine miso, maple syrup and vinegar in a small saucepan. Before cooking it, brush about 1/2 cup of the mixture on both sides of the ribs and season them well with salt and pepper.
  3. Seal each rack of rib tightly within the foil and place on trays. Bake for 2.5 hours.
  4. While the ribs are cooking, bring the sauce to a boil and then simmer over medium-low heat until thick and glossy, should take about 20-25 minutes. Stir constantly near the end to avoid burning.
  5. When the ribs are done, lay out on one foil-lined baking sheet and brush the sauce over them on both sides. Arrange the scallions around the ribs on the sheet and drizzle with oil. 
  6. Place under the broiler for about 5 minutes and chop additional scallions. Slice and separate ribs and arrange on a platter with additional chopped scallions on top.
