PEAR TART

Perfect autumnal treat.

PEAR TART

Makes: 6-8 servings                        
​Takes: 2-3 hours
Crust:
  • 1¼ cups all-purpose flour
  • ¼ cup granulated sugar
  • ¼ teaspoon salt
  • 1 stick of cold butter, cut into small cubes
  • 1 large egg
  • ½ teaspoon vanilla extract
Filling:
  • 1 cup + 3 teaspoons sugar
  • 6 tablespoons flour
  • 3 eggs
  • 1 stick of butter
  • 2 pears (peeled, cored and sliced thinly)
Crust:
  1. Process flour, sugar, and salt in a food processor for a few seconds until combined. Add butter and pulse until mixture becomes crumbly.
  2. Add egg and vanilla extract and keep pulsing until the dough starts to come together, about 10-15 seconds.
  3. Turn dough out onto a lightly floured surface and form into a ball. Flatten ball slightly with your hands to form a thick disc. Wrap with plastic wrap and refrigerate for at least 1 hour.
Filling:
  1. Combine sugar, flour, eggs in a bowl. Whisk until smooth. 
  2. Melt butter in a skillet over high heat til foamy and golden.
  3. Slowly whisk melted butter into sugar mixture and set aside.
Assemble & Bake:
  1. Preheat over to 375 degrees.
  2. Remove dough from refrigerator and on a lightly floured surface, roll the dough out into an 11-inch circle, then place gently into a 9-inch tart pan. 
  3. Cover with parchment paper and fill with pie weights. Bake for 20 minutes.
  4. Cut pears into thin slices and arrange into a fan shape on the crust.
  5. Pour melted butter mixture over the pears and bake tart for about 20-30 minutes until golden brown. Serve warm with powdered sugar, whipped cream or with nothing if you're starving and impatient like me!
