SUMMER TOMATO SALAD

Summer tomatoes don't need much to be delicious. This salad is still simple, but special.

SUMMER TOMATO SALAD

Makes: 4 servings
​Takes: 10 minutes
  • 3-4 medium heirloom tomatoes
  • 3-4 oz feta cheese
  • 1/2 cup basil and/or mint
  • 1/2 cup pita chips (Stacy's multigrain are my personal fave)
  • 1-2 tsp flaky salt
  • Juice of 1 lemon​
  • 3 tbsp extra-virgin olive oil
  • 1 tsp honey
  1. With a very sharp knife, cut tomatoes into wedges and slices (I like to have a mix), discarding the core. Transfer to a platter and sprinkle with some flaky salt.
  2. Roughly chop basil or mint leaves and sprinkle across the tomatoes.
  3. Slice the feta into quarter inch planks and break up in half or quarters with your hands. Place on platter with tomatoes. ​Crunch up some pita chips with your hands and sprinkle on top of the salad as well.
  4. In a small bowl or measuring cup, combine lemon juice and olive oil. Once ready to serve, drizzle honey over the tomatoes as well as the lemon/olive oil mixture. Top with more flaky salt if needed!
