SWEET POTATO HASH

Quick and delish one pan breakfast!

SWEET POTATO HASH

Makes: 2 servings
​Takes: 20 minutes
  • 1-2 sweet potatoes
  • 1/2 of a yellow onion
  • 1/2 cup of crumbled sausage, bacon or panchetta (optional)
  • 1 teaspoon rosemary
  • 1/4 cup of feta or goat cheese, optional
  • 2-4 eggs
  • Salt & peppar
  1. Peel sweet potatoes and chop into small cubes. Finely dice half of an onion.
  2. Heat a cast iron skillet with olive oil. Add onion and cook, stirring every so often, until soft. If using sausage or bacon, add to the skillet and brown.
  3. Add sweet potatoes and rosemary and cover skillet, allowing potatoes to steam for about 10-15 minutes.
  4. Once potatoes are soft, create divits in the hash and crack eggs directly into skillet and cover. Alternatively, can just fry eggs in a nonstick pan.
  5. Serve egg on top of hash and top with cheese, if using, and salt & pepper.
