TOMATO, BASIL, GOAT CHEESE CROSTINI

Makes: About 30

  • 1 baguette
  • 2 tablespoons olive oil
  • 1 cup of cherry tomatoes
  • 2 teaspoons oregano
  • 1/2 log of goat cheese
  • Handful of basil, chopped
  1. ​​Preheat oven to 350°. Cut baguette into thin slices, place on a baking sheet and drizzle with olive oil. Bake until slightly golden and crispy, about 5-8 minutes.
  2. Cut cherry tomatoes into quarters and place in a pyrex dish. Toss with oil and oregano and roast in the oven until fragrant and dark, about 20 minutes.
  3. Spread goat cheese on each toast, top with a spoonful of tomatoes and fresh cut basil.
